Grandma Elsie's Spoon Rolls

This is an easy roll recipe that your kids will love.

--Scald 3/4 cup milk. (To scald milk, heat it in the microwave until tiny bubbles appear around the edges, but before the milk boils up, for about 1-2 minutes. You also can do this on the stove in a small pan over low heat).

--Cool milk with 3/4 cup cold water.

--Dissolve 1 package dry yeast in 1/4 cup warm water (110-115 degrees F) and 1 teaspoon sugar. Let sit 10 minutes.

--Beat 1 egg or two egg whites in mixing bowl. Add to egg 1/3 cup melted shortening OR salad oil, 1 teaspoon salt and 1/4 cup sugar; mix.

--Add milk and yeast; stir.

--Add 4 cups of flour, stir until thoroughly mixed.

--Let dough double in bulk (takes about one hour). Punch down. Spoon balls of dough into greased muffin tins so each hole is 1/2 full. Let dough rise until almost to the top of the pan (about an hour or so).

--Bake at 350 degrees for 12-15 minutes, or until golden brown. Brush tops with melted butter. Makes about 18-24 rolls.
