Stovetop "Unstuffed" Bell Peppers


Here's Paula's latest shortcut recipe for busy moms:


"I grew up on stuffed bell peppers and my children have always loved them, but they are a bit time consuming. I have to admit, I was feeling lazy the other night and took a few shortcuts but the results were fantastic!''

1 lb. ground beef or turkey
2-3 small bell peppers coarsely chopped
1 can of spaghetti sauce (I use Hunt's)
1 8 oz can of tomato sauce
1-2 cups of instant rice
1 cup of mozzarella cheese
Seasonings to taste (I season my ground meat with onions, garlic powder, Italian seasoning and salt and pepper)

Brown and season ground meat in pot, drain (or brown in skillet and transfer to pot that you would normally cook your spaghetti sauce in)
Add Spaghetti Sauce and bell peppers
Bring to a boil
Reduce heat to medium
Add tomato sauce and cook for 2-3 minutes
Add instant rice
Cover and cook for 10-15 minutes
Reduce heat to low
Stir in Cheese and serve

We also like to add Parmesan cheese to ours! Enjoy!
