cups of pancake mix (like Bisquick) Optional: add flavorings like a dash each of cinnamon and nutmeg Mix
all the ingredients together in a bowl. Heat a non-stick pan or griddle
on medium heat; add a thin layer of oil to the hot griddle. When the
oil is sizzling hot, spoon enough batter to create a four-inch pancake;
if you make it bigger, it's harder to turn. Turn the pancakes when they
start bubbling (because they are thin, they don't take long to cook).
Serve with maple syrup or fresh fruit. Serves four-six. To
